Our story

How did an American diner-style bistro appear in Trenčín?

From Atlanta to Trenčín...

"What I loved in America, I wanted to bring home."

Hi, my name is Jano and my journey to DINER did not start in the kitchen, but abroad. After studying hospitality management in the UK, I went to work in America, where I fully experienced diner culture. Places with atmosphere, character and food that is honest, distinctive and made in a way that people want to come back to.

It was there that I fell in love with American classics, which we hardly know here, but when they are done well, they have a completely different level. But then covid came and my American dream had to stop for a while. I returned to my hometown of Trenčín and started over.

First came Fatty Patty, a smash burgers concept that I built on quality ingredients, attention to detail, and honest preparation. I wanted the burgers to really taste like the best ones I had the opportunity to taste in America. Thanks to this, many people today associate Fatty Patty burgers with the best that can be tasted in Slovakia in this regard.

But I didn't want to stop at burgers. I also missed other American classics. And I missed a place where people wouldn't just come to grab something to go, but would actually sit down, slow down for a moment, and enjoy good food in a pleasant atmosphere. DAJNER was born from this very idea.

Diner "our way"

I loved the American diner for its atmosphere, simplicity, and food that people love to come back to. But at the same time, it was clear to me that completely transferring such a concept here would not make sense. Every place should function naturally where it is created.

That's why I took what I loved about diner culture. Iconic dishes, perfectly blended slushies, and the atmosphere of a place where you can really sit down and relax for a while. And I combined it with what I consider important at home. With an emphasis on quality, honest preparation, and a taste that doesn't need unnecessary drama.

That's how DAJNER was created, our way. A place inspired by America, but built to function here, in Trenčín, naturally and in its own way.

Honest ingredients

It's all about quality. We select ingredients so that every item on the plate has its own meaning and taste. No speculation, no frills, no compromises where it matters most.

The taste that technology makes

It's not just about what you use, but also how you work with it. From the right preparation to the final result, the details that may not be visible at first glance, but you will recognize them immediately in the taste, are decisive.

We adjust everything our own way.

I create sauces, combinations, and the final balance of flavors so that each dish has its own character. It's not enough for it to look good. It has to work as a whole and, most importantly, taste so good that you want to come back.

Fast but cool

I like food that arrives on time, but without the assembly line feel. DAJNER is supposed to be a place where you get things quickly, but still with an emphasis on quality, atmosphere, and a relaxed experience.

You already know a lot about Jan. He is the founder of Dajner and oversees our entire business. In addition, he sometimes works in the kitchen as an assistant chef. His TOP dish on the menu is Cheesesteak - it was his taste for it that inspired him to create Dajner.
